  • 1 teaspoon lemon juice

  • 1 tablespoon fresh basil or mint leaves, chopped

Instructions

  1. Prepare the Filling: In a medium mixing bowl, combine the feta cheese, olives, onion, tomatoes, basil, oregano, lemon juice, salt, and pepper. Toss until well mixed. The filling should be fragrant and evenly combined.
  2. Prepare the Cucumbers: Cut the cucumber in half lengthwise and scoop out the seeds and center using a spoon or melon baller to create hollow “boats.” Be careful not to scoop too deeply to maintain sturdy walls.
