  • 3 garlic cloves (minced)
  • 500g liquefied tomatoes (or canned tomato puree)
  • 3 bay leaves
  • 1 sprig each of rosemary and oregano
  • 350g minced meat (beef or chicken)
  • 100g chorizo (crumbled)
  • 1 teaspoon sweet paprika
  • 1 teaspoon Tabasco sauce (optional for heat)
  • 100g refried bean paste (store-bought or homemade)
  • 250g grated mozzarella cheese
  • 1 bell pepper (thinly sliced)
  • Olives and jalapeños (to taste)
  • Pepperoni or ham (optional)

Instructions

Step 1: Prepare the Dough

  1. In a mixing bowl, combine flour, yeast, salt, and lukewarm water. Gradually add olive oil while mixing until a dough forms. Knead for about 10 minutes until smooth and elastic. If using a stand mixer, use the dough hook attachment.
  2. Shape the dough into a ball, place it in a greased bowl, cover with cling film or a damp cloth, and let it rise in a warm spot (~30°C) for about 40 minutes or until doubled in size.

Step 2: Make the Tomato Sauce

  1. Heat olive oil in a saucepan over medium heat. Sauté minced garlic with bay leaves, rosemary, and oregano until fragrant. Add liquefied tomatoes and simmer for about 10 minutes until thickened. Remove herbs before blending into a smooth sauce.

Step 3: Cook the Meat Mixture

  1. In a skillet over medium heat, cook minced meat and chorizo together until browned. Break up clumps with a wooden spoon. Season with paprika, Tabasco sauce (if using), and salt to taste. Stir in refried beans if desired or save them for assembly.

Step 4: Assemble the Pizza

  1. Preheat your oven to 200°C (400°F). Roll out the dough into one large circle or divide into two smaller pizzas based on preference. Place on a baking sheet or pizza stone.
  2. Spread tomato sauce evenly over the base, leaving about an inch around the edges.
  3. Layer cooked meat mixture over the sauce, followed by mozzarella cheese.
  4. Add toppings like bell peppers, olives, jalapeños, pepperoni, or ham.

Step 5: Bake to Perfection

  1. Bake for approximately 20 minutes or until the crust is golden brown and cheese is bubbly. Let cool slightly before slicing.
