Ingredients

Scale
  • 4 boneless, skinless chicken breasts, cooked and shredded
  • 8 ounces Nacho Cheese Doritos, crushed into bite-sized pieces
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 small cans (10.5 oz each) cream of chicken soup
  • 1 can (10 oz) Rotel tomatoes with green chilies, drained
  • ¾ cup whole milk
  • 1 cup shredded Cheddar cheese

Ingredient Notes & Substitutions:

  • Swap Cool Ranch Doritos for a flavor twist.
  • Use rotisserie chicken for convenience.
  • Substitute cream of chicken soup with cream of mushroom or celery for variety.

Instructions

Step 1: Preheat and Prepare Chicken

Preheat your oven to 400°F (200°C). Bake the chicken breasts for 20–25 minutes until fully cooked. Once cooled slightly, shred them using two forks.

Step 2: Crush the Doritos

Crush the Doritos into bite-sized pieces (not crumbs). Spread half of them evenly in the bottom of a greased 9×13-inch baking dish to form a crunchy base layer.

Step 3: Make the Sauce

In a mixing bowl, whisk together the cream of chicken soup and milk until smooth. This creates the creamy binder for your casserole.

Step 4: Combine the Filling

In another bowl, mix the shredded chicken, black beans, Rotel tomatoes, and half of the prepared sauce. Stir until evenly combined.

Step 5: Layer the Casserole

Spread the chicken mixture over the layer of Doritos in your baking dish. Pour half of the remaining sauce over this layer and sprinkle with shredded Cheddar cheese. Repeat with another layer of crushed Doritos, chicken mixture, sauce, and cheese.

Step 6: Bake to Perfection

Bake uncovered for 20–25 minutes until bubbly and golden on top. Let it cool slightly before serving.

Notes

Serving Suggestions:

Serve warm with sides like Spanish rice or a fresh green salad. Garnish with sour cream, diced avocado, or fresh cilantro for added flair.

Tips & Tricks:

  • Avoid over-crushing Doritos to maintain their texture. Bite-sized pieces work best!
  • For extra cheesiness, add more shredded cheese on top before baking.

Storage & Reheating:

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat individual portions in the microwave for 1–2 minutes or warm larger portions in a 350°F oven for 10–15 minutes.

Make-Ahead Option:

Assemble the casserole up to the baking step and refrigerate for up to 24 hours. Bake as directed when ready to serve.
