  • 2¾ cups water
  • 1 teaspoon kosher salt
  • Zest and juice of 2 limes (divided)

Instructions

  1. Rinse the Rice:
    Rinse the rice in a fine mesh sieve under cold water until the water runs clear. Drain well to remove excess starch for fluffier rice.
  2. Boil Water:
    In a medium saucepan, bring the water and salt to a boil over medium-high heat.
  3. Cook the Rice:
    Stir the rinsed rice into the boiling water. Add the zest and juice of one lime, then cover the saucepan with a tight-fitting lid. Reduce heat to low and simmer for 18–20 minutes until all the water is absorbed.
  4. Rest the Rice:
    Remove the saucepan from heat but keep it covered for an additional 10 minutes to allow the rice to steam and become tender.
  5. Add Final Touches:
    Uncover and fluff the rice gently with a fork. Stir in the remaining lime zest, lime juice, and chopped cilantro until evenly combined.
  6. Serve:
