For the Sauce

  • ½ cup mayonnaise

For the Sloppy Joe Meat

  • 2 pounds ground beef (80/20 recommended)
  • 1½ cups beef stock (or chicken/vegetable broth)
  • ½ cup ketchup
  • ½ cup tomato paste
  • 1½ tablespoons packed light brown sugar
  • 1 tablespoon Worcestershire sauce
  • ½ tablespoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper

For Assembly

  • 4 sesame seed buns (+4 extra bottoms for double-deckers)
  • 4 slices American cheese
  • Shredded lettuce

Instructions

Step 1: Make the Sauce

In a medium bowl, whisk together mayonnaise, French dressing, dill pickle relish, minced onion, sugar, vinegar, and garlic powder. Cover and refrigerate to let the flavors meld while you prepare the meat.

Step 2: Cook the Sloppy Joe Meat

Heat a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it into crumbles (about 7–10 minutes). Drain excess grease.

Stir in beef stock, ketchup, tomato paste, brown sugar, Worcestershire sauce, salt, garlic powder, onion powder, and black pepper. Bring to a simmer. Reduce heat to low, cover, and cook for 10 minutes. Stir occasionally.

Remove the lid and simmer for another 5–10 minutes until most of the liquid has evaporated but the mixture is still moist and glossy.

Step 3: Assemble the Sandwiches

For single-layer sandwiches: Place a bottom bun on a plate. Add sloppy joe meat, top with a slice of cheese, drizzle with Big Mac sauce, add shredded lettuce, and finish with the top bun.

For double-deckers: Start with a bottom bun. Layer meat, cheese, another bun bottom, more meat, sauce, lettuce, and finally a top bun.
