Homemade Apple Pie Filling or 1 (21 oz) can apple pie filling
6 (8 inch) flour tortillas
1 teaspoon ground cinnamon
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup water
Instructions
Preheat oven to 350°F. Butter a 9×13 inch baking dish.
Soften tortillas in the microwave if needed.
Spoon about 1/4 cup of apple pie filling onto each tortilla, sprinkle with cinnamon, and roll up. Place seam side down in the baking dish.
Combine butter, white sugar, brown sugar, and water in a saucepan. Bring to a boil, then simmer for 3 minutes.
Pour sauce over enchiladas and let stand for 45 minutes.
Bake for 20 minutes or until golden.
